Hapa Kitchen Thanksgiving in Tokyo

While I was based out of Tokyo for a few months in late 2009, Famous Original Jackie and her fiancé Jeff came to visit, and so we decided to throw a Hapa-style Thanksgiving dinner: American holiday staples made with Japanese ingredients. I conquered the initially confounding challenge of an oven-less kitchen in the apartment with, of all things, a terra cotta potter from Ikea—turned into a Turkey Smoker. We fed expats and locals a Thanksgiving feast: smoked turkey, cranberry sauce with mandarin and shiso, sweet potato pie, and more.
