I created this menu in January 2010 for a post-Valentine’s dinner—I’d been chatting with Tom Mylan and the boys over at the Meat Hook and was interested in working with offal with a Hapa spin. Sadly, the event I put this together for didn’t push through, but I hope to serve it in the future.
